Let's start with a premise: when you arrive in Bari , one of the first things you have to do is try focaccia barese!
Suffice it to say that it was awarded as the best in Italy at Fico Eatalyworld in Bologna
Focaccia , or child who doesn't love it (or so it seems). You'll find this quintessential Bari delicacy in practically any bakery in and around Bari .
Focaccia has a truly inviting appearance thanks to its soft yet crunchy dough and the abundance of tomatoes and olives. This typical Bari recipe is commonly considered a snack to be enjoyed any time of day, anywhere (it's no coincidence that it's a Bari street food staple ) , but it can also be an ideal lunch or dinner starter... some people even eat it for breakfast!

When you buy it from a bakery, it's advisable to add some cured meats, especially mortadella; in Bari , the perfect pairing is focaccia with mortadella .
For those who don't like tomato skin, there's also a white version, without tomato and with a little oregano...but it's not quite the same.
However, my advice is to try it both ways. 😉
