Let's start from an assumption: when you arrive in Bari one of the first things you have to do is taste the Bari focaccia!

Suffice it to say that it was awarded as the best in Italy at Fico Eatalyworld in Bologna

Focaccia an institution, there is no man, woman or child who doesn't like it (or so it seems). this typically Bari product in practically any bakery in Bari and the surrounding area .

The focaccia has a decidedly inviting appearance thanks to its dough, which is soft and at the same time crunchy, and the quantity of tomatoes and olives present on it. This typical recipe from Bari is normally considered as a snack to be enjoyed at any time of the day and in any place (it is no coincidence that it falls among the street food products of Bari , but it can also be ideal for covering lunch and even dinner... there some even eat it for breakfast!

When you go to buy it from a bakery, the advice is to also put some cured meats on it, especially mortadella; in fact, know that in Bari the par excellence pairing is focaccia with mortadella .

While for those who don't like tomato skin, know that there is also the white one, i.e. without tomato and with a bit of oregano... but it's not quite the same thing.
